Where It All Began......

I can't believe I haven't a blog entry about Sandi, the amazing woman who installed my Sisterlocks. If it weren't for Sandi, I would still be a loose natural head. The Sisterlocks website, blogs and various forums I visited were great inspirations but Sandi sealed the deal. When I saw her beautiful locks flowing over her shoulders I knew Sisterlocks was for me. She's an absolute angel who is my consultant, my friend, a shoulder, and just an awesome person. She has this wonderful energy. How crazy is it that my locks are now the same length hers were when I got mine installed? Since she has her hair tied back you can't see the thickness, but her hair is twice as thick as mine. She's been locked for a little over 6 years.

We hadn't seen one another for six months. She's lost so much weight and looks phenomenal! She also noticed that I had lost some weight as well....YES!!!!

Greens & Pasta!!!!!
1) La Dolce Vegan's Spinach Salad w/ Sweet Vinaigrette Dressing - I've always been a fan of raw spinach, the addition of raisins & toasted pine nuts was greatly appreciated. The dressing on the other hand was not sweet at all, just vinegary..
2) Manicotti - This was a good recipe! My only issue was the suggestion to not cook the pasta beforehand, it was just to al dente for me.
3) Nonna's Italian Kitchen's Baked Macaroni & Tomatoes - This is the best recipe I've tried out of this book yet. It was so creamy and will most likely be my mac&cheese fix meal. Lando is in love with this one.
4) General Tao's Tofu - I can never recommend this recipe enough! I wanted to see how it would taste without battering the tofu, it wasn't as great as the original but it was still good and more point friendly.

The two of you are absolutely beatifuo. Wow, Sandi's locks have grown since I've seen her almost 1 year ago. Your locks are just amazing even since I met you. Next month will be a year for me. We got to get together again. Are you going back to Sandi now?

The food looks soooo good!!

It is wonderful when you can foster a good relationship with your consultant. I think it makes the whole process smoother. Okay, that spinach salad is calling me.

Great news on the consultant. Thanks so much for posting the mac and cheese recipe. You know I suffer from a cheese addiction. I am going to try it ASAP. You lok great in the pic. When you come to ATL, can I just pay you to cook meals for the week? :p

Sophia> I can't say how fortunate I am to be lactose intolerant enough when it comes to going veggie. Cheese is one, or most likely the hardest, food to let go of. The Baked Macaroni tastes nothing like actual mac & cheese but it's very creamy. I forgot to mention I subbed Tofutti's Sour Cream instead of making the recommended white sauce.

You'd want to hire me to cook your meals? AWESOME!!! LOL!!! Once I'm settled in (and that could take a while), I would like to have a get together to showcase vegan dishes. There are so many misconceptions regarding the vegan diet....you know?

Wow, Sandi look great! I had to look twice because she looks different from when I met her almost 2 years ago.
